Moi! (as we say hi in Finland)
Many of you know that I am born and raised in Finland but ended up living in Malmö, Sweden after 3 years in Stockholm, 2,5 years in Helsinki, 6 months in Barcelona and 6 months in New York and the rest living in my home town Vaasa, Finland. I defintiely miss some traditional Finnish dishes and we do cook them at home from time to time. This recipe is definitely one of those worth sharing. Simple and creamy salmon soup! Tastes best enjoyed with a piece of rye bread.
Finnish salmon soup for 4
300g salmon
2 carrots
250g potatoes
(you can also add other root vegetables of wanted)
1 big onion
fresh dill
2,5 dl cooking cream (I used Oatlys oat cream)
2 vegetarian bouillon stocks
3 bay leaves
1,5 l water
salt
black pepper
oil
- chop the onion and slice the carrots and potatoes. Sauté the chopped onions in oil.
- Add the water and the vegetarian bouillon stocks start boiling the water.
- Toss in the sliced potatoes and carrots aswell the bay leaves. Let them cook around 10-15 minutes.
- Cut the salmon into cubes and chop the dill.
- When the vegetables have softened you can add the dill and the salmon cubes and cook 5 minutes more.
- Add the cooking cream and season with salt and pepper. Decorate with fresh dill.
- One lager and Finnish rye bread is always a good match to this soup!
