Granola that tastes like carrot cake but still is healthy and has plenty of good fibers to help our digestion work as it should. Brilliant. Pretty sure its best thing to have on your morning yoghurt. The recipe is for one big oven dish and it comes here
Carrot cake granola
3/4 dl coconut oil
1/2 dl honey
1 dl apple puré (Semper baby food)
8 dl of oatmeal
1 dl seeds of choice (I used sunflower)
1 dl of hazelnuts
1 tsp cinnamon powder
1 tsp ground cardamom
1/2 tsp nutmeg powder
1/2 tsp salt
2 carrots grated
2 dl dried apricots
- Melt the coconut oil in a pot and mix together with the honey and the apple puré
- Mix together all the dry ingredients and the pour in the coconut oil with honey and apple. Mix together with your hands not leaving any part “dry”
- Bake in oven in 150° around 30 minutes and the lower the temperature to 120° and bake another 30 minutes more. Make sure that you stir the granola every now and then so it’ll get crispy evenly
- Enjoy with plant-based or natural yoghurt to keep your tummy happy!
