It’s already February 2020 and soon I’ll start working again while Gustav will stay at home with our daughter Iisa. Therefore it is good to have recipes that are easy to cook but are still tasty and nutritious. This recipe is inspired by amazing chef tuvessonskan.se who also lives in Malmö. She has written a whole book about dishes that you can cook in the oven while you relax on the sofa or maybe entertain the kids, fold your laundry or what not. This dish will feed a party of four.
The idea is to make a colorful and tasty dish with root vegetables and add some protein. I used salsiccia sausages but you can replace it with halloumi for instance or why not vegan sausages. Sky is the limit! I never peel the root vegetables because all the nutrition sits in the skin. There is a lot of garlic in this dish and I love it, but cut half the amount of garlic cloves
The sauce is made out creme fraiche, mustard and apples. Gives a nice fresh touch to it.
Roasted root vegetables with salsiccia and feta cheese
5 potatoes
half a butternut squash
half a cauliflower head
3 carrots
8 cherry tomatoes
8 gloves of garlic
150g feta cheese
300g salsiccia (alt vegan sausages or halloumi)
olive oil
dried herbs (rosemary, thyme, oregano etc)
chives (fresh or frozen)
pinch salt
pepper
mustardy crème fraîche with apple
2 dl creme fraiche
half a granny smith apple
1 tsp honey
1 tbsp dijon mustard
1 tsp apple cider vinegar
salt
pepper
- Preheat the oven to 225°C. Cut all the potatoes, carrots, butternut squash and cauliflower into cubes. No need to peel them.
- Cut the salsiccia into chunks
- Put the root vegetable cubes on a oven tray with cherry tomatoes, garlic cloves and the salsiccia chunks
- Pour over 2 tbsp of olive oil and sprinkle over some pinch salt. Let it roast in the middle of the oven as long as the root vegetables have soften
- Now mix 0,5 dl olive oil with dried herbs and tear the feta cheese into chunks or cut into cubes. Pour the oil over and add the feta cheese for the last 5-10 minutes and set the oven on grill mode so the cubes and chunks get a bit crispy and brown surface
- Grate the apple and mix with the rest of the sauce ingredients. Season with salt and pepper
- Serve with the mustardy creme fraiche and sprinkle over some chives
