This recipe is a killer.
And a cheap one. Works also well with minced soy meat to make it vegetarian and leave out the butter for a vegan version. This is a perfect for those days you feel like spicing up a little bit your life in quarantine. Sambal oelek chili paste gives a nice fiery kick to to this noodle dish.
Spicy pork noodles for 4
400g minced meat (pork or soy)
1 cm piece of fresh ginger
8 garlic cloves
2 tbsp honey
2 tbsp tomato paste
0,5 dl sambal oelek chili paste
1/2 dl apple cider vinegar (or some other vinegar)
1/2 dl Soy sauce
400g egg noodles
0,5 l water
fresh thai basil (if it is hard to find use normal basil)
Heat oil in a large wide heavy pot over medium-high. Add the minced meat in chunks (if possible) to pot and cook and stir with wooden spoons. Turn pieces and continue to cook, turning occasionally, until meat is browned on 2–3 sides
Add grated ginger, chopped garlic, honey to pot and continue cooking until the meat is thoroughly cooked.
Add sambal oelek, tomato paste, soy sauce, apple cider vinegar and half a liter water. Bring to simmer and reduce the heat to low. Cook without a lid occasionally stirring about 40 minutes.
- Cook the noodles in salted water
- Add noodles to the sauce pot with butter. Simmer, tossing occasionally, until sauce begins to cling to noodles, around one minute.
- Decorate with thai basil leaves and enjoy
