Soup mexicana

If you are craving for something a bit spicy, warm and hearty this soup is perfect match. It is mainly plant-based besides chicken broth and quorn bites has egg as a ingredient. You can definitely replace chicken broth with vegetarian and quorn bites with for example soy strips to make it totally plant-based. If you are more fond of chicken that works as well.

Soup mexicana

250 g quorn bites/soy strips/chicken
1,5 liter chicken/vegetarian broth
1 onion
3 garlic cloves
4 tomatoes
1 can of chopped tomatoes
1 dl corn 
1 can of black beans
1 lime
1 teaspoon of five spice
1 teaspoon brown sugar
2 teaspoons cumin 
sliced & canned jalapenos
2 tbs soy sauce
2 avocados
(tortilla crips, sour cream, fresh cilantro for topping)

1. Fry quorn bites/soy strips/chicken on a medium hot pan and add five spice
2. Fry corn in oil in a little kettle until brown
3. In a large pot combine chicken/veg broth, diced tomatoes, canned chopped tomatoes, jalapenos, 
black beans, lime juice, diced onions, 
sliced garlic cloves, fried corn, soy sauce and remaining spices
4. Bring to a boil, then reduce to a simmer and cook for 20 minutes. check the taste and add more salt and spices if needed
5. Garnish for example with avocado, lime, fresh cilantro, tortilla crips and sour cream
